Introduction
The end of August the hedgerows should be full of blackberries and this dish showcases them perfectly

Preparation
Check over blackberries take off any stems etc
Juice lemon and grate some peel for decoration
Instructions
Whip cream to soft peaks, add cream cheese and whip again until smooth and fluffy
Add lemon juice, vanilla, sugar and salt, whip again to combine all ingredients.
Depending on how many fresh blackberries you have mix them into the cream mixture – very lightly – keeping enough to decorate
Place in serving bowls and decorate with remaining blackberries and grated lemon peel
Refrigerate for at least 30 minutes
Cooks tips
Make the brownies in advance and freeze, allow to defrost completely then re-heat for about 15 minutes serve them warm drizzled with caramel sauce.
