Introduction

This is a family recipe going back to 1950’s a real favourite with all of us from 3 to 70-year olds

Steps

  1. Mix small quantity of milk with Semolina, Bournvita and sugar.

  2. Boil the remaining milk and pour onto mixture.

  3. Return to pan and bring to boil. Simmer for 5 minutes stirring all the time.

  4. Allow to cool completely.

  5. Assemble in layers in glass dish:

  6. spread Raspberry jam on base and sides of dish

  7. cover with biscuit crumbs (only use 1/2 of biscuit crumbs)

  8. add cooled Bournvita mixture

  9. dot with teaspoonfuls of jam

  10. pour on a little cream - use knife to encourage it to bottom of dish

  11. finish with thick layer of biscuit crumbs

Cooks tips

Pudding can be assembled in advance, but biscuit crumbs soften - doesn’t seem to bother any of its fans!

A little extra cream could be added

850ml  Full Fat Milk

170g Semolina (or Semolina and Ground Rice 50:50)

3 tsp. Bournvita

25g Sugar

250g Digestives (rolled with rolling pin to create crumbs)

1-tab Raspberry Jam

150ml Double Cream
