Introduction
This is a traditional South African dish and the flavour is in the Cape Malay style
Oven temperature
Heat oven to 180°c/160°c Fan – 320°f – Reg 4
Steps
Pour cold water over bread and soak for 10 minutes
Fry onions in butter until soft and just starting to colour
Add garlic fry for 1 minute then add mince fry breaking up until it changes colour.
Add curry paste, herbs, spices, chutney, sultanas and couple of the bay leaves, season well
Simmer for 10 minutes then squeeze water out of bread and add to seasoned mince breaking the bread up
Add to an ovenproof dish and make topping
Beat milk and eggs and season well pour over the meat mixture and arrange bay leaves on top
Bake for about 40 minutes until the topping is set and golden brown
Cooks tips
The dish can be prepared in advance, stop at step 6 cook minces without the topping then either keep in the fridge for approx. 1 day or you can freeze at this stage. Just add the topping and cook until the mince is hot and the topping set.

6 bay leaves
Topping
300ml cream
