Oven temperature

Pre heat oven to 190°c 170°c fan – 375°f - Reg 5

Steps

Preparation

  1. Cook pasta in boiling salted water for approx 8 minutes until just starting to soften, drain so it doesn't cook any further.

  2. Chop chicken into bite-size pieces season by tossing the chunks in a plastic bag.

  3. Chop and deseed red pepper

  4. Grease an ovenproof dish

  5. Grate all 3 kinds of cheese together.

Instructions

  1. Heat oil in wok add chicken and cook until sealed and just turning brown add chopped red pepper with chorizo, cook for further 5 mins approx. until chorizo just releasing oil.

  2. Put passata, cream and chilli flakes in a pan and bring to a slow simmer for 5 minutes.

  3. Put par-cooked pasta and chicken mixture in the base of the dish and pour over the sauce.

  4. Add grated cheeses and sprinkle over the top 

  5. Put in the oven for 30 minutes until it is bubbling and golden brown.

Cooks tips

Don’t over cook the chorizo, take off the heat when the oil starts releasing this stops the sausage tasting tough.

  • 250g pasta

  • 1 tab oil

  • 4 chicken fillets  

  • Red pepper

  • Chorizo sausage sliced

  • 300g passata

  • 200ml single  ream

  • ½ teaspn chilli flakes

  • 50g cheddar cheese

  • 50g mozzarella cheese

  • 25g Parmesan cheese
