Introduction
This makes a tasty topping for canapes, especially if you can use tomatoes from your garden.

Steps
Preparation
Peel and finely chop onion.
Peel and mince garlic cloves
Wipe and chop tomatoes – drain for approximately 15 minutes.
Tear basil into small pieces
Instructions
Mix together onion, garlic, drained tomatoes and basil.
Add oil, vinegar, and seasonings.
Mix and then leave for at least an hour for all the flavours to develop.
Place mixture onto prepared bruschetta
Garnish with sliced black olive.
Cooks tips
This is an easy topping just make sure the tomatoes aren’t too wet as the bruschetta will not stay crisp.
