Cauliflower & Bacon Salad

Great salad for all year round as cauliflower is always in the shops. Makes a change from potato salad

Preparation

Chop Cauliflower into bite size pieces

Clean and chop celery and spring onions

Instructions

Cut off 2 sheets of aluminum foil, in one sheet place cauliflower chunks into the center season well and add the water. Completely seal with the other sheet. Put on a baking tray put under the grill for 15 minutes.

Grill bacon at the same time turning every now and then until just crisp

Once cooked chop bacon and allow both bacon and cauliflower to cool​.

Make dressing by combining all ingredients together adding seasoning to taste.

Mix cauliflower, bacon, celery and onion together and pour dressing over add chopped chives to garnish

Cooks tips

Make the salad in advance as it improves the flavour put in the refrigerator but take out about an hour before you serve .
