This fresh salad is great, and the hazelnuts give it a lovely crunch

Steps

Preparation

  1. Top, tail and chop French beans

  2. Thinly slice the orange peel and chop it into small pieces

Instructions

  1. Place beans in boiling water for 3 to 4 mins then drain, put under the cold tap and plunge into iced water so the beans stop cooking.

  2. Put frozen peas in boiling water for 1 minute and then add to the iced water

  3. Make the dressing by adding orange juice to both oils and shaking vigorously until they are combined.

  4. Drain the vegetables and add orange peel and hazelnuts.

  5. Pour over the dressing and serve.

Cooks tips

Make the salad in advance as it improves the flavour put in the refrigerator but take out about an hour before you serve.
