Preparation
Trim beans
De-stone the olives
Boil eggs for approx. 6 minutes and put in iced water.
IInstructions
Put beans in boiling water and cook for approx. 5 minutes until al dente.
Shell the eggs
Mix half the olives, red vinegar into the yoghurt taste and add seasonings.
Pour the yoghurt over the beans eggs and scatter remaining olives on tap add a good pinch of pepper and serve.
Cooks tips
to make this into a main dish poach a piece of salmon and serve alongside.
