A filling warming soup perfect to come home to after a Winter walk!

Preparation

  1. Chop Chill and pepper take out seeds depending on how hot you like your soup

  2. Peel and chop finely garlic

  3. Chop chorizo into small chunks

  4. Chop herbs

Instructions

  1. Heat oil add sausage, chilli, pepper and garlic, on medium heat until oils start coming out of chorizo.

  2. Add beans, tomato, stock and half herbs.

  3. Boil then simmer gently for 5-10 minutes.

  4. Adjust seasoning (if a little sharp add small amount of sugar).

  5. Serve in warm bowls with rest of herbs & shredded Parmesan.

Cooks tips

Do not over cook the chorizo as it will go hard and lose its flavour

  • 1 x red pepper

  • Garlic clove minced

  • 300g cannellini beans

  • 400g chopped tomatoes

  • 240ml stock

  • Seasoning to taste

  • Fresh parsley & basil chopped

  • 1 tab parmesan
