Introduction
These potatoes are great for a lunch time snack but also bake smaller potatoes and use as a canapé
Oven temperature
220°c-200°c Fan oven - 450°f - 7 Reg
Steps
Drizzle of oil
Scrub potato clean and bake in oven until soft
Scoop out and mash with a knob of butter
Cut peppers into strips and chop basil leaves roughly
Add pepper. Basil (keep a little back to garnish) goat’s cheese to potato mix together season to taste. Refill jackets
Drizzle with oil put back in oven for 15 minutes
Serve with reserved basil leaves sprinkled over the jackets
Cooks tips
I use 1 potato {70g} per person for a starter - the ingredients here should be enough for 2 people
