Steps
Preparation
Cut chorizo ring into slices
Peel and chop onion, take off stem and remove seeds from red pepper cut into bite size pieces
Chop parsley
Top and tail beans and cook for approx. 10 minutes until just cooked
Combine 3 tabs oil, red wine vinegar, honey and 1 tsp of lemon in a screw top jar and shake.
Instructions
Heat 1 tab of oil in wok cook onion until translucent, add in the chopped peppers and cook until just softening.
Add chorizo until paprika oil starts to release from sausage.
Add dressing, tomato paste, lemon juice and paprika, stir to combine
Add raw prawns and cook them until they have turned pink.
Add in cooked beans and chopped parsley cook for approx. 1 minute until everything is hot
Cooks tips
Do not overcook the chorizo or prawns as both go rubbery quickly!
Serve with
with sliced of French Bread to soak up the delicious sauce
