Introduction

​​Nothing new here just a traditional prawn cocktail - it has been a popular starter since the ‘60’s and still being enjoyed, so why change it!

Steps

  1. Drain all juice from prawns lay them on some kitchen paper to dry out

  2. Squeeze juice from half lemon – keep the other half to slice for garnish.

  3. Make the sauce by mixing together mayonnaise, tomato ketchup, double cream, Worcestershire sauce, lemon juice and a pinch of paprika.

  4. Taste and add seasoning to taste

  5. Mix prawns into the sauce (keep a few back to garnish the cocktails)

  6. Shred lettuce leaves and peel and slice the avocado.

  7. Either layer the lettuce, prawn mixture & avocado in a cocktail glass or ring the changes and serve in a complete lettuce leaf.

  8. Garnish with paprika, prawns and lemon wedges.

Cooks tips

This is such an easy starter I make the sauce a little in advance then just assemble a little before you are going to eat so the prawns take on some of the sauce flavour.
